I love burritos, fajitas, and basically any Mexican food (vegan of course). I especially love vegan fajitas. They are simple, easy, and affordable.
- 1 can of black beans or 1 cup.
- 1 cup of rice (brown or white).
- Mini sweet peppers.
- 1/2 of an onion.
- Sliced tomatoes.
- 1/2 of an avocado.
- Lettuce (optional).
- 2 small corn tortillas.
This is a really easy recipe. Cook the veggies in a skillet until they turn light brown. I also put a little garlic and salt in the pan. Cook the rice and beans as you usually would. I put lime juice and cilantro in my rice. Make sure to rinse both the beans and rice before cooking and put whatever seasoning you want. Heat the corn tortillas in a pan for a few minutes on each side. That’s basically it. I put some tomato slices, avocado, and lettuce on the side.
